Sweet Potato Gnocchi

Happy Wednesday to you all! You know what’s coming don’t you? It’s How-to-Wednesday! Follow this simple recipe to learn how to make your very own homemade Gnocchi! And just because I love them and they are oh so in season, I used sweet potatoes in this recipe! Couldn’t resist the beautiful golden colour they added to my gnocchi!
Ingredients
- 1 large sweet potatoes (or 2 small)
- 1 1/2 cups all-purpose flour
- 1 egg
How to Make It
Step 1
Wash and pierce the sweet potato
Step 2
Cook sweet potato for 20 minutes (or 5 minutes in the microwave), cut in half to scoop out the flesh
Step 3
Place the sweet potato into a large bowl and using a fork, mash the potatoes into a purée
Step 4
Onto a clean surface, pour 1 cup of the flour and make a well in the middle
Step 5
Break the egg into the well and using a fork gather in the sides to blend egg with the flour
Step 6
Add the mashed potatoes and continue mixing using your fingers
Add the remaining 1/2 cup of flour and continue to kneed the dough
Step 7
Bring the dough into a ball then split it into 4 equal parts
Roll each quarter out into a straight thin rope then chop into bite sized pieces
Step 8
To shape the gnocchi, simply flatten the piece of dough on the back of a fork then roll it onto itself to form the gnocchi
Repeat until you are out of dough
Step 9
Leave the gnocchi out to fully dry before either cooking immediately or freezing for a later recipe!
Best enjoyed sautéed with some brown butter and fresh sage! And don’t forget the parmesan cheese!

The word Gnocchi may be derived from the Italian word Nocchio, which means a knot in wood, or from Nocca, which means knuckle. The dish has been popular dating back to Roman times. The addition of Potatoes to the recipe is quite recent, ocuring after the introduction of potatoes to Europe sometime in the 16th century. the Roman recipe was traditionally made from a semolina porridge-like dough mixed with Eggs.
Did you know that in France, Gnocchi are also very popular side dishes, they are called the Gnocchi à la Parisienne, and they are made from Chou Pastry dough!
