Courgette Cake

 Courgette Cake

Courgettes are in season! Yeah! So, if you’re into moist, tasty, colorful cakes this recipe is for you! I for one am not into salted cakes, but this recipe made me change my mind, there’s nothing un-yummy about it! All the right ingredients plus the perfect moist texture for a meatless Monday recipe!

Ingredients

  • 600g courgettes🥒
  • 250g carrots🥕
  • 3 eggs
  • 30g parmesan cheese
  • 15cl olive oil
  • 100g flour
  • 70g whole wheat flour
  • 50g walnuts
  • 7g baking powder
  • 1 tbs powdered curcuma
  • A pinch of nutmeg
  • Salt & pepper

Cheese cream spread

200g goat cheese
20g parmesan cheese
2 tbs whipped cream
Salt & pepper

How to Make It

Step 1

Pre heat the oven to 180°C

Step 2

Wash and grate the courgettes (you don’t need to peel them if they are organic)
Peel and grate the carrots

Step 3

Mix flours, nutmeg, curcuma, salt, baking powder then add the grated courgettes and carrots

Step 4

In a separate bowl mix the eggs and the olive oil then pour onto the previous mixture and mix well
Pour into a greased, rectangular baking tray and bake for 45 minutes

Step 5

mix together the goat cheese, parmesan and whipped cream and garnish with some freshly chopped chives, reserve in the fridge

Step 6

Serve the cake chilled with a side of the cheese spread! Yum 😋
